Leshan Boboji, Jiazhou Guzhenji Boboji originated in the southwestern Sichuan region in the late Qing Dynasty and the beginning of the Republic.For more than a hundred years, Leshan people have meticulously passed on and brought forth the new.

 

As a cold dishes dish technique, Leshan's Boboji production techniques continue to innovate and develop, becoming Leshan's unique food culture. In the past two decades, its production skills have been developed on the basis of traditional skills, with more soup, richer ingredients , and unique consumption and eating methods, which are convenient and fast. Due to the needs of large-scale production, the production equipment has undergone great changes compared with the past. It mainly uses more modern and environmentally friendly equipment, with stable quality and large production volume. This craftsmanship has achieved the combination of tradition and modern-ity, which has contributed to the development of Leshan Boboji's food culture.

Leshan has a long history of making Leshan sweet ducks, represented by Ji Liuniang Sweet Duck and Leshan Zhao Duck. After nearly 40 years of craftsmanship improvement and market tempering from the 1980s to the present, it is very famous.

 

On the basis of traditional marinating techniques, it is transformed into blanching with oil, and then sugar can be added to form the unique Leshan sweet-skinned duck technique among marinated products. Its taste is rich and delicious: thin, crispy, tender meat, strong in the mouth; slightly sweet and spicyed organically blended, with a long fragrance. Nowadays, "Ji Liuniang Sweet  Duck" and "Leshan Zhao Duck" have formed the two pillars of Leshan Sweet Skin Duck and become the classic representatives of Leshan Sweet  Duck.

For more than 100 years, almost every household in the Linjiang area has mastered the eel making skills. In the early 1990s, individual restaurants in Linjiang introduced eel as a special dish. In a short period of time, "Linjiang ee-l" became famous and spread far and wide in Sichuan. Among them, the Linjiang eel making skills of "Luoyuanzi Chinese Restaurant" and "Yongsheng Restaurant" are particularly outstanding.

 

Linjiang eel has a unique process: cook the eel for seven to mature, remove it, and then use the 100-year-old beef bone to grind it into a knife (metal knives are too sharp and not suitable for shredding), three knives for shreddi-ng (one eel only cut into shredding with three knives, that is, one knife on the abdomen and two knives on the spine), cook with more than 10 kinds of spices (the cooking flavor is between Sichuan hot pot and boiled pork slice-s), and sprinkle with spring bud spices, a unique Linjiang The eel is out of the pot.


Jiazhou Wanghaoer Fish Hot Pot Making Skills

The predecessor of "Jiazhou Wanghaoer Fish Hot Pot" can be traced back 180 years ago. Huang Ying's ancestor brought fish cooking spices and ancestral secret techniques from his hometown in Xiaogan, Hubei, and created th-e "Huang's Fish Hot Pot." The fifth-generation inheritor, Huang Ying, inherited the "Huang's Fish Hot Pot" and founded the "Leshan WangHaoEr Fishing Port" on the Min River, Wang Hao'er Street, Downtown Area, Leshan City, and created the famous "Jiazhou WangHaoEr Fish Hot Pot" brand at home and abroad.

 

The craftsmanship is unique, ranging from the processing of ingredients, the compatibility of auxiliary materials, to the preparation of hot pot bottom materials, from knife skills to fire conditions, especially the recipes of hot pot bottom materials. It is made by adding 19 rare Chinese medicines to the original soup stock of "Huang's Fish Hot Pot". It is the core skill of "Jiazhou Wang Haoer Fish Hot Pot".

"Yu's old Jiazhou sweet water noodles" is a traditional folk technique in Leshan. It has a history of more than 100 years since its inception, and has been passed on and carried forward through 4 generations. The project has bee-n purely hand-made from production to preparation to cooking: hand kneading, cutting, rubbing, adding purely hand-boiled sweet water noodle sauce, red oil chili, and finally sprinkling purely handmade  peanuts and sesame seeds, and a bowl of fragrant sweet water noodles appeared in front of us.
